Book-Inz Eats: Tequila Lime Slow Cooker Chicken

So I thought I’d pass along some of my tried and true time saving slow cooker recipes. Because seriously, who doens’t need more time? And slow cooker recipes save time. A LOT of time. I’ve been reading cookbooks lately and found this one in 300 Low-Carb Slow Cooker Recipes by Dana Carpender. Total credit goes to her taste buds!



Tequila Lime Chicken

  • ‎3/4 t salt
  • 1/4 t pepper
  • 1/4 t cayenne
  • 1/2 t garlic powder
  • 1/4 t onion powder
  • 1/4 t thyme
  • 3 lbs chicken skinless chicken thighs (I use boneless/skinless)
  • 2 T butter
  • 1 T olive oil (I use grapeseed oil)
  • 4 cloves minced garlic
  • 3 T lime juice
  • 1 T tequila
  • 1 t chicken bouillon concentrate

Mix together everything from salt to thyme. Sprinkle on both sides of chicken. Using large skillet on medium, add butter and oil. Let butter melt and swirl the two together. Add chicken and brown till golden on both sides. Transfer chicken to crock pot and pour all the fat into the cooker on top of the chicken (trust me – this is where the fantastic flavor comes from!). Using the same pan on medium, toss in the garlic and stir a bit. Add lime juice, tequila and bouillon. Stir everything, scraping up all the brown bits and make sure bouillon is dissolved completely. Pour evenly over chicken. Set crock pot to low and cook five hours. Remove chicken to platter, thicken sauce and serve it over the chicken. I serve this over brown rice. Yields 5 servings: 265 calories; 13g fat; 31g protein; 2g carbs; trace fiber
